Lobster Chowder

1. Fry in 2 Tbsp.
butter, one large finely chopped onion until translucent.
2. Add 6 lbs of cooked, shelled lobster meat cut into bite-sized pieces (this is how you get the lobster chowder broth to be
nice and orange)
3. Continue to fry on medium heat for 2 minutes.
4. In the meantime, peal and cube into bite-sized pieces 4 medium potatoes.
Cook in boiling water until just cooked (if you over-cook them, they will get mushy and spoil the consistency of the chowder).
5. To the frypan of onion and lobster add 2 cup of Blend, when mixed well with the onion, lobster and broth, transfer
this to the cooked potatoes, add salt and pepper to taste and more Blend to the consistency and thickness you desire.
